Crust
Purchase ready made crust
Filling
3 lbs ripe peaches (about
9 medium size)
1 cup granulated sugar
3 tbs all purpose flour
1 tbs lemon juice
Note: To peel peaches, immmerse
in boiling water 30 sec. to 1 min. |
Mixed separately, then used as glaze
crust
2 tbs butter or margarine
Egg white mixed with 2 tsp water
1/4 cup granulated sugar
1. Roll out dough into 9" pie pan & refrigerate
2. Prepare filling: Peel peaches (see note) & cut in 1/2
inch thick wedges (about 7 cups). Mix sugar & flour in
a large bowl. Add peaches, sprinkle w/lemon juice & toss
w/sugar mixture until evenly coated
3. Heat oven to 375 degrees.
4. Spoon filling into pie and dot w/butter
5. Apply top layer of crust & pinch edges
6. Bake 50 to 55 min. until pastry is golden brown & peaches
are tender when pierced. Remove to wire rack. Cool at least
1 hour.
