One large green salad cucumber, peel &
discard the skin, slice in half & scoop out any large
or tough seeds
Shred in a food processor, then using a colander,
ardently press out liquid
1-1/2 cups plain yogurt in a mixing bowl combine
with shredded cucumber
2 or more cloves garlic pressed or finely
chopped *
3 teaspoons olive oil
Combine all ingredients ... Salt to taste,
stir until well blended, serve with crackers, small French
bread slices or vegetables for dipping
